Recently I enjoyed an interesting drink with my newly hired, masters swimming coach and friend, CJ! She brought a batch to our team’s holiday social to share. One sip and I immediately asked for the recipe; it’s that good!!!
Tomorrow, the TigerTailgate RV is heading to Miami to host a Georgia Tech vs. Mississippi St. tailgate at the Orange Bowl! Gates open at 8am … the game starts at 8pm … New Years at midnight … an all day fun, tailgating celebration!
We’re planning to serve our infamous Low Country Boil and The Smith’s Salt Steak … 2 All-Ivy tailgating award recipes! AND for my infamous punch … it has to be Cuban Eggnog! It’ll be perfect to enjoy with our Southern friends while celebrating the New Year in Miami!
La Linda & CJ’s Coquito
aka Cuban Eggnog
- 1 15oz can of cream of coconut
- 1 14oz can of sweetened condensed milk
- 1 12oz can of evaporated milk
- 6oz white Bacardi Superior rum
- 1/4 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/8 tsp ground nutmeg
- 1 tsp vanilla extract
- Mix in blender. Serve really cold or over ice.
It’s a yummy sipper!
Can be refrigerated several days.
Personally, I added more rum and some pineapple juice to each batch.
This morning I made 4 batches and stored in “empty” rum bottles in the fridge til tomorrow’s tailgate!
